Edrick, founder of Casa Paella, has earned top honours in the prestigious Concurso Internacional de Paella Valenciana de Sueca, the oldest and most renowned paella competition in Spain. He placed 5th in 2013 and 4th in 2015, a remarkable feat in an event recognised as one of the world’s top 25 food experiences. In 2015, Edrick was named Embajador del Concurso Internacional en el Pacífico and became the first non-Valencian to join the competition’s judging panel, evaluating some of the finest paella chefs and restaurants in Valencia.
Edrick’s dedication to promoting Valencian cuisine was further recognised in 2018 when he was awarded the Paella D’Honor, the competition’s highest honour. In 2022, he received the International Paella Concurso Bronze Spoon for excellence in paella-making.
What to Expect
The class begins with a brief history of paella, including video clips from Edrick’s visits to Valencia and the rice-growing region of Albufera. You’ll explore the origins of this iconic dish, learn what makes a paella authentic, and discuss the essential ingredients, tools, and techniques used by professional paella chefs.
After the introduction, it’s time to head to the paellero (the traditional cooking station) to observe the traditional preparation of this so often misunderstood yet magnificent dish. .
Personalised Diplomas
Each participant will receive a personalised diploma, signed, dated, and numbered to certify completion of the class. This diploma guarantees you’ve been trained by a professional chef and are now qualified to prepare the official recipe of the Concurs Internacional de Paella Valenciana de Sueca.
